Alma’s style Chicken Mole








Ingredients for the Chicken:
4 Chicken breast
1 onion
1 garlic bulb
1 table spoon of salt
5 cups of water









In a pot add water, chicken, onion, garlic and salt and let it boil until chicken is ready.

Ingredients for the Mole sauce:
1 bottle of Doña Maria Mole sauce
8 chile pods (dried Chile California)
2-3 garlic clove
1 teaspoon of salt
2 cups of chicken stock (I use the stock from the chicken I cooked)
1/2 cup of water









In the blender mix in chiles, garlic cloves and water once it’s all well blended use a colander to pour into a pot, add Doña Maria sauce and stir together with the chili mix and add chicken stock in small quantities while stirring (make sure you stir until the Doña Maria sauce is no longer chunky and the sauce is thick you do not want it to burn).












**You can serve with rice and beans if you like***

Karol's chicken green chili



3 T. butter
1 1/2 cups chopped onion
1 cup chopped green bell pepper
3 jalapeno peppers, chopped
3 cloves garlic, minced
2 T. chili powder
2 t. ground cumin
1/2 t. dried oregano
4 cups cooked chicken (whatever parts you like, just leave out the eyes)
1 c. water
1/2 t. ground red pepper
1/4 t. black pepper
1 T. worcestershire sauce
1 T. dijon mustard
1 (14 oz can) diced tomatoes
1 (14 oz can) chicken broth
1 12 oz bottle chili sauce (heinz makes the best, and sometimes I use two bottles)
1 16 oz can great northern white beans
1 1/4 cup diced avacado
1 1/4 cup chopped purple onion

Melt butter in big pan and add onion and next 3 ingredients, saute 5 minutes
add chili powder, cumin, oregano and cook for another 2 minutes
add chicken, water and next 7 ingredients, bring to a boil
cover, reduce heat and simmer for about 20 minutes
add beans and cook an additional 5 minutes and let simmer for awhile.
